Ingredients

Ingredients for Chimichurri Rojo (Red Chimichurri)
  1 cup roasted red capsicumchopped (bought or roast the capsicum yourself over the coals)
  1/2 cup fresh parsleypacked
  1/4 cup red wine vinegar
  2 tsp smoked paprika
  5 garlic clovespeeled
  1/4 cup fresh lemon juice
  1/4 tsp black pepper
  1/2 tsp salt
  1/2 tsp crushed red chilli flakes
  1/2 cup olive oil

Directions

Make The Sauce

In a food processor, combine roasted red capsicum, parsley, garlic, vinegar, paprika, lemon juice, salt, pepper, and red chilli flakes.

Blend until smooth or leave slightly chunky, based on your preference.
