Why carbon steel
Carbon steel heats up fast and spreads the heat evenly across the surface, so you get a proper sear without hot spots. Every time you cook with a little oil, the seasoning builds into a dark, naturally non-stick patina. There is no coating to scratch or wear off, and it handles heat up to 350°C, so it is just as happy over coals or on a camp stove as it is on the stovetop or in the oven at home.
How to use it
Give it a rinse and a light wipe of oil before the first cook. Preheat it over medium heat, add a little oil and you are ready to go. Take the handle off while the pan sits over coals or an open flame, and use a heatproof glove when you move the hot pan. When you are done, wash it by hand, dry it straight away and wipe on a thin coat of oil.
