Mielie Meal or pap is a popular staple food in South Africa. When you're invited to a braai you can be assured that there will be pap served with a rich tomato relish.
It is similar to Italian polenta or American grits except that it is usually made of a white rather than a yellow maize variety. In this recipe, we are going to add some additional goodness that will take the traditional pap recipe to the next level. You can serve this as a side dish with any meat.
If there are any leftovers the next morning you can eat the pap as a porridge by adding some milk and sugar.

2 cups Maize Meal (Protea Mielie Meal)You can now buy it from most Woolworths or South African shops
6 cups Water
2 pinches Salt
1 cup Full Cream
1 Creamed / Sweet Corn Edgell Aussie or South African Koo Sweetcorn
Chunky Tomato Relish
1Get a large saucepan and add the water.
2Heat the water but do not boil. When you start to see the small bubbles form then you know it is ready.
3Add the maize meal to the water while stirring to prevent any lumps. The consistency of the maize meal mixed with water should be smooth. (Do not add the maize meal if the water is already boiling as this will result in a white magma like substance to explode out of the pot)
4Reduce the heat and simmer for about 10 minutes with the lid on before adding the can of sweetcorn and cream.
5Simmer for another 20 minutes with the lid on, stirring occasionally until soft and fluffy.
